Stuffed Tofu Puffs

Tofu puffs are light and spongy textured squares with a hollow centre. It can soak up the flavour of your dish like a sponge and make for a heartier dish. The hollow centre makes them ideal for stuffing with minced meat or vegetables. Deepfry to cook the filling and serve as an appetizer or entrée.
Tofu puffs are high in Protein, contains very high Calcium, low in Carbs, high in Iron and a good source of Fibre.

Stuffed Tofu puffs
Prep time: 30mins
Cook time: 20mins
Serves: 4 pax

Ingredients:
One dozen Tofu puffs
Oil for frying

Fillings:
150gm fish paste
4 cloves water chestnuts (diced)
8 fresh prawns (devein and diced)
5pcs shitake mushrooms (diced)
Chopped chinese parsley (optional)
1 whole egg
1 tbsp corn flour
2 cloves garlic (chopped)
1 tbsp oyster sauce
Pepper to taste

Method:
1) Combine all filling ingredients in a bowl and set it aside.

2) Cut up cross section on the tofu puffs and invert the puffs inside out. Be very gentle as we do not want to tear the puffs.

3) Stuffed the puffs firmly with the fillings.

4) Heat up oil to deep fry the puffs.
5) As puffs soak up oil, ensure that oil is hot enough before frying. While frying, maintain medium flame.
6) To check if the fillings are cooked, insert a toothpick and prick on the center of the fillings. If the toothpick pulled out clean, means its ready to be removed from the oil. Leave on strainer to remove excess oil.
7) Serves with sweet sauce & chili oil. Enjoy!
